Chef Kylie Anglesey will teach us simple to prepare recipes with elevated flavour profiles. This 4-week course series where you get to enjoy the fruits of your labour and take leftovers home, focuses on classic comfort foods with a creative twist.
Creating a basic sauce that can be used in many different recipes, flavor development, mac and cheese recipe variations
Recipes: classic Mac and cheese with options to add bacon, vegetable purees, flavoring and spices
Activities: making a cheese sauce from scratch, customization of recipes, utilizations of basic sauces
Goal: basics of sauce making, elevation of simple recipes, flavour development
Making pizza dough from scratch, pizza sauce, creative flavour combinations
Recipes: pizza dough, pesto, pizza sauce, roasted garlic
Activities: making and stretching pizza dough, sauce making, flavor development, taste profiles
Goal: building confidence in making homemade doughs, combining flavors, technique development
Introduction to vegetarian proteins and grains, texture building, flavour balancing through the creation of a selection of healthful bowls packed full of flavour and nutrients.
Recipes: Buddha bowls, tahini dressings, roasted chickpeas, bitter greens
Activities: preparing grains in different methods, roasting and seasoning vegetables, creating sauces and dressings.
Goal: familiarization with vegetarian cuisine and cooking techniques, vegan cuisines and modifications, flavor development and layering
Basic baking techniques, including making and shaping doughs by hand, proper cooking and finishing techniques and variations of flavor profiles in savory and sweet biscuit preparation
Recipes: cheddar chive scones, lemon poppy seed scone, ham and cheese biscuit
Activities: measuring techniques for baking, shaping and cutting dough, layering flavours in batters
Goal: Understanding proper balance in moisture, flavour, and texture when baking
Creative Comfort foods is a 10-hour non-credit workshop offered in our industrial commercial kitchen onsite at the main campus in Gatineau.
